Banana Strawberry Crepes

Need an extra special breakfast or brunch idea? We got it here!! This AMAZING recipe will make your day. I love creating new recipes with crepes. In the past I’ve never liked making crepes, due to the time. However, I’ve learned that using a blender saved me tons of time.  I really enjoyed the stawberry sauce without using the corn starch as well, but note that the sauce will not be as thick. Strawberry Sauce

  • 1 lb strawberries
  • 1/2 cup sour cream
  • 1 tbsp corn starch
  • 1/2 cup sugar


  • 3 eggs
  • 4 tbsp melted butter
  • 1/8 tsp salt
  • 3 tbsp sugar
  • 3/4 cup water
  • 2 cups milk
  • 1/8 tsp vanilla powder
  • 1 ½ cups flour

Additional ingredients for filling and topping:

  • 3 bananas
  • 1 lb strawberries
  • Nutella
  • Toasted coconuts for decor


  1. Using immersion blender, blend 1/2 cup sugar, 1 lb strawberries, and 1 tbsp corn starch.
  2. Simmer the sauce in a small pot for about 5 min. Cool completely (it will thicken as it cools.)
  3. In a blender, blend 3 eggs, 4 tbsp melted butter, 1/8 tsp salt, 3 tbsp sugar, 3/4 cup water, 2 cups milk, 1/8 vanilla powder, 1 ½ cup all-purpose flour.
  4. Cook the crepes on medium high about 1 min per side.
  5. Take out the cooled strawberry sauce and add 1/2 cup sour cream.
  6. For the filling lay your crepes flat.  arrange sliced bananas, sliced strawberries, drizzle with nutella and strawberry sauce.
  7. Fold both sides of the crepes and for the topping drizzle some more nutella, strawberry sauce, and sprinkle with toasted coconut flakes.
